Beetroot Pulao
Beetroot Pulao is a nutritious and delicious dish made with beetroots, peas and rice. For added nutrition you can add other vegetables too.Tastes great when served with raita.
Ingredients
1 medium sized beet root 1 medium sized onion chopped
3-4 tbsp oil for tempering/tadka (as required)
1/2 cup shelled peas (frozen works too)
2 cups raw basmati rice cooked
2-3 star anise
4-5 cloves
1 tsp cumin seeds (jeera)
2-3 cardamom pods
1 tsp garam masala
1 tsp garlic paste (can use ready made ginger garlic paste from the indian store)
1 tsp ginger paste
1-2 green chillies slit
cilantro leaves to garnish
Directions
Steam 2 cups basmati rice with salt in a rice cooker or any method that you use to steam rice. Wash and peel the beet root, dice them into very small pieces, you can grate it if you wish
Add very little water and microwave the beet root with a little salt for 4 mins on high setting. Drain excess water.
heat 3-4 tbsp oil in a wok/vessel and add cumin seeds, start anise, cloves, cardamom pods and when the cumin seeds begin to fry add the chopped onion and stir fry in medium heat
when the onions begin to caramalize (golden color) add the ginger, garlic paste and fry for 30 seconds
Add the green chilllies and garam masala and stir fying until you get a good aroma.
Add the boiled beetroot and peas and stir fry for about 5 mins until the beet root is well done
Loosen the steamed rice with a fork so as to separate the rice grains.
Add the steamed rice to this mixture and stir gently until well incorporated.
Taste and adjust salt as required.
If you like it more spicy heat 2 tbsp oil in a separate vessel and add chopped green chillies or more garam masala as per taste.
Garnish with cilantro leaves and serve with raita.
