Karari Bhindi
Karari Bhindi is a simple and delicious dish made with crispy okras and potatoes.
Ingredients
oil for frying 1 pound okra (bhindi)
7-8 baby potatoes skinned
1 onion sliced
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
Salt to taste
1/2 tsp cumin seeds
2-3 tsp oil for seasoning
Directions
clean and cut the top of the okra and make slits. Pat dry the bhindi to remove any water clean and skin the potatoes, cut the potatoes to halves, if they are bigger than 1 inch, cut to 1 inch pieces
To deep fry the bhindi and potatoes, Heat the oil in a frying pan.
Deep fry the bhindi, be sure not to burn them or remove into absorbant paper.
Deep fry the potatoes until well cooked, remove into absorbant paper.
In a skillet heat two tsp oil, add the cumin when done add the sliced onions and saute until golden brown.
Add chilli powder, tumeric powder and coriander powder.
Add fried potatoes and okra, salt and stir, cook on a low flame until the masala is incorporated, taking care not to mush the bhindi or the potatoes.
Serve with rotis or rice.
