Kathi Roll
Kathi Roll A simple and any time snack, I have two recipes here one for chicken kathi roll and the other a vegeterian version
For the Chicken kabab kathi roll
Ingredients
1 lb ground chicken (kheema)
2-3 tsp whole coriander roasted and pounded (not powder)
1 tsp jeera
1 tsp red chilli flakes
1 tsp ginger paste
1 tsp garlic paste
1 tsp kabab masala or tandoori masala
1 tsp mint chutney or finely chopped mint leaves
1 pinch tumeric
1 small onion chopped
1/2 cup oil to shallow fry
salt to taste
For the filling 1/2 onion sliced
1 tsp chat masala
coriander leaves to garnish
1-2 drops lemon juice
2 tomatoes sliced into wedges
For the wrap 5-6 warm rotis cooked with oil
Directions
In a bowl mix all the reshmi kabab ingredients together except the oil.Grease your palms with oil and shape the chicken mixture into sausage shaped 4-5 inch tubes.
In a pan heat oil and shallow fry the prepared kabab mixture, turning frequently until each side is browned and the chicken is well cooked
Remove the kebabs into absorbant paper.
Cut the kebabs into 2 inch pieces, add sliced onions, chat masala, lemon juice and toss it all together. Garnish with corianderleaves
To make the kathi rolls place some of the kebab filling into the roti, smear 1/2 tsp of chutney, place one or two tomato slices
Roll it into a kathi roll and serve with coriander mint chutney and yoghurt.
Vegetarian Version
Ingredients
2 cups 1 inch cut cubes of paneer
1 cup yoghurt
3 tsp tandoori masala
1/2 tsp turmeric powder
1 tsp ginger paste
1 tsp garlic paste
1 tsp chilli powder
salt to taste
1/2 capsicum chopped to inch cubes
1/2 cup oil to shallow fry
For the filling 1/2 onion sliced
1 tsp chat masala
coriander leaves to garnish
1-2 drops lemon juice
2 tomatoes sliced into wedges
For the wrap 5-6 warm rotis cooked with oil
Directions
Mix tandoori masala and yoghurt mixture with salt, chilli powder, turmeric powder, ginger garlic pasteMarinade the paneer cubes in this mixture Shallow fy the paneer mixture until done. Stir fry the capsicum with salt. Add sliced onions, chat masala, lemon juice to the paneer and capsicum and toss it all together. Garnish with corianderleaves
