Massaman Curry


Massaman Curry

Massaman Curry is a Thai curry which is Muslim in origin (which is reflected in the name). It can be made with any meat or tofu and also contains peanuts, potatoes and is generally served with steamed Jasmine Rice.

Ingredients

2 tablespoon oil
1/2 cup chopped green bell pepper (capsicum)
1/2 green bell pepper (capsicum) chopped
one sprig of basil leaves
thinly sliced boneless chicken 1/2 pound
1/2 cup bamboo shoots
1 small half boiled potato cut into 1 inch cubes
1 tsp sugar (to taste, optional)
5-10 peanuts roasted
1 can coconut milk
1 small can massaman curry paste (available in oriental stores)
Note: The massaman curry paste contains salt, this recipe doesnt require additional salt

Directions

Heat the oil in a large skillet over a medium heat.
Add the canned massaman curry paste and stir fry for 2 to 3 minutes.
Add the can of coconut milk and stir until all spices are incorporated. Add two cans of water to the mixture.
Add the chopped bell peppers, cook until half done.
Add chicken, chopped basil leaves, half boiled potato cubes, bamboo shoots and sugar (optional) and simmer until the chiken is well cooked.
Serve with steamed Jasmine rice.
