Pad Prik King


Pad Prik King

Pad Prik King is a dry red curry which can contain any meat with long string beans. It is a favorite of Spicy Food lovers all over the world and is generally served with steamed Jasmine Rice.

Ingredients

2 tablespoon oil
about 15 strings of string beans, chopped to 1 inch pieces
1 small can of pad prik king paste (available in Thai/Chinese stores)
one sprig of basil leaves
thinly sliced boneless chicken 1/2 pound
1/2 cup bamboo shoot
1 tsp sugar (to taste, optional)
1/4 cup crushed roasted peanuts
Note: the pad prik king paste contains salt. The recipe doesnt require additional salt

Directions

Heat the oil in a large skillet over a medium heat.
Add the can of pad prik king paste and stir fry until it begins to brown, 2 to 3 minutes.
Add the chopped string beans to the paste and stir fry for about 5 minutes on a low heat.
Add chicken, chopped basil leaves and stir until all spices are incorporated.
After about a miniute add 1/2 cup of water and sugar (optional) and simmer until the chiken is well cooked.
Garnish with basil leaves sprig and crushed roasted peanuts.
Serve with steamed Jasmine rice.
