Red Curry


Red Curry

Red Curry is another one of the delicious colorfule Thai curries.

Ingredients

2 tablespoon oil
1/2 cup chopped green bell pepper (capsicum)
1/2 cup brocolli
one sprig of basil leaves
thinly sliced boneless chicken 1/2 pound
1/2 cup bamboo shoots
1 tsp sugar (to taste, optional)
1 can coconut milk
1 small can Redcurry paste (available in oriental stores)


Note: The red curry paste contains salt, this recipe doesnt require additional salt

Directions

Heat the oil in a large skillet over a medium heat.
Add the canned red curry paste and stir fry for 2 to 3 minutes.
Add the can of coconut milk and stir until all spices are incorporated. Add two cans of water to the mixture.
Add the chopped bell peppers, cook until half done
Add chicken, chopped basil leaves, half boiled potato cubes, bamboo shoots and sugar
When the chicken is done add the broccolli cook for a minute and turn off the heat Serve with steamed Jasmine rice.
