Thai Green Curry


Thai Green Curry

Thai Green Curry is a green curry which can contain any meat with vegetables like Capsicum(Green Peppers), Chinese Eggplant among others. It is a favorite of Spicy Food lovers all over the world and is generally served with steamed Jasmine Rice.

Ingredients

2 tablespoon oil
1 small chinese eggplant chopped
1/2 green bell pepper (capsicum) chopped
one sprig of basil leaves
thinly sliced boneless chicken 1/2 pound
1/2 cup bamboo shoots
1/2 cup straw mushrooms
1 tsp sugar (to taste, optional)
1 can coconut milk
1 small can green curry paste (available in thai/chinese stores)
Note: The green curry paste contains salt, this recipe doesnt require additional salt

Directions

Heat the oil in a large skillet over a medium heat.
Add the canned green curry paste and stir fry for 2 to 3 minutes.
Add the can of coconut milk and stir until all spices are incorporated. Add two cans of water to the mixture.
Add the chopped bell peppers, chinese eggplant and cook until half done.
Add chicken, chopped basil leaves,straw mushrooms, bamboo shoots and sugar (optional) and simmer until the chiken is well cooked.
Serve with steamed Jasmine rice.
