Vegetable Pulao
Vegetable Pulao is a quick and delicious recipe with the goodness of vegetables and rice. Serve with raita or kadhi for a perfect one dish entertainer
Ingredients
3 cups basmati rice2 tbsp biryani pulao masala
1 small onion sliced
5 tbsp oil (you can use ghee instead of oil if preferred)
1 tsp cumin seeds (jeera)
3-4 cloves
2-3 cardamom pods (elaichi)
1-2 bay leaves
1 cup french cut french beans (frozen variety can be used)
1 cup diced carrors and green peas (frozen variety can be used)
1 tsp garlic paste
1 tsp ginger paste
1/2 cup raisins and cashew mix (optional)
salt to taste
Directions
Wash and clean rice, soak it in warm water for 10-15 minutesIn a pan heat oil, add the sliced onions and fry until golden brown
Add cumin seeds, cloves, cardamom pods, when the cumin seeds begin to fry add the biryani masala.
Roast the masala for 30 seconds add the ginger garlic paste and saute for 30 seconds.
Add all the vegetables, salt per taste and stir fry until the vegetables are half cooked (2-3 minutes).
If using rice cooker drain and add the rice and water upto the 3 cup level and stir in prepared vegetables and masala. add more salt if necessary. Cook until the timer is done slowly stirring the rice and vegetables once in between to ensure it is well incoporated
If cooking in a vessel, cook the rice with 6 cups of water (double of rice measure) and stir in the prepared vegetables and masala. Cover and cook on low heat and stir gently in between to ensure it is well incorporated and the rice doesnt stick to the bottom of the vessel or burn
Garnish with coriander leaves. Serve with raita or kadhi.
Note: You can add salt while cooking the vegetables and while cooking the rice, its a good idea to taste the rice and vegetable mixture together before adding more salt. If the pulao cools down it can stick together. Do not stir once cooked else the rice grains will break. To ensure long grained pulao, loosen the pulao with a fork (scrape it). This helps separating the rice grains without mushing it
